Ok so I just got some great news. My wife and I are planning a little trip to Dallas for the last weekend of March or the first weekend of April, and I've been given the ok to dedicate one day to fishing. Planning on trying to book a guide and take a trip to Lake Fork. Just wondering if you guys have any recommendations/opinions as far as who I should look into. I'm hoping it wouldn't be too late to find someone. Any help would be greatly appreciated!

There's a bunch of great guides down there.  Check Lake Fork Marina's web site for a large list and start making some phone calls.
