looking for a thick clear coat that is not an epoxy

As far as I know there is no such thing.  All of the non epoxy clear coats that I've seen or read about are water thin.   Devcon is about the thickest clear that I've used.

Dick Nites is pretty thick, but its a pain to keep cause it likes to dry out

Probably the thickest non-epoxy will be a two-part automotive clearcoat sprayed in multiple coats.  They're toxic, so start thinking about spray booths, air filter systems, and full face masks.
