I have a 28 lbs trolling motor on my 10' jon now and am looking at a used 36 lbs for a fairly cheap price.  will I notice much of a difference in them if so in what ways speed controll ect.  

Also would it go faster if I had both running at once?

Yes to both questions. You won't plane your boat but it will go faster. More thrust = more speed
