Needed something for work tonight, had a can of solid white albacore and a desire to play.

Took said can of tuna, the zest of 1 lemon, the juice of half that lemon, 3 tablespoons of good olive oil. 1 tsp of sea salt, a few grinds of pepper, and a tablespoon of capers.

Tuna is such a perfect blank canvas.

Sounds tasty.  Once you've had really good olive oil, there is no going back.

If we have some on hand, I like to mash marinated artichoke hearts into my tuna.

Man yall need help. What is wrong with a good old can of potted meat. ;D

Frogtog:  I think Hormel used to sell a small can of corned beef hash that I used to like to eat. Still do, in fact:o) Maybe I'll see if they still sell it at the commissary tomorrow. Not all that healthy, but GOOOD!
