Trolling Motor Conversion - Need Your Help

Perhaps someone that has done this or maybe an electrician can chime in here...

i'm going to convert a 30lb minn kota trolling motor for my kayak.  it will be hands free drive by using the foot pedals that are currently in use for the rudder.

where i do not know how to proceed is how to convert the wires/head into what i suppose would be a rotary switch of some type.  anyone have any insight on what type of switch i would need to buy in order to allow me to operate the forward drive (speeds 1-5) as well as reverse from a hand operated switch or dial?  links to plans or specific products are GREATLY appreciated.

or get an electronic speed control with power modulation, it will give you infinite speed control instead of 5 speeds and should conserve on battery draw. you run the box between battery and motor, and then run a little control knob where ever you want. this is to give you an idea whats out there, you may want to find a cheaper one with less capacity and will do reverse.

i have a wilderness ride 135 and have a 30lb minn kota.  i actually already figured out a way to semi-permanently rig up a mount so i kind of have that solved.  i need to figure out the re-wiring situation for a new control knob that i can operate from the seat (removing the head on the motor and re-wire something new).  i'm just starting out and looking for some blueprints to get me going.

the only part i'm really stuck on is how to raise/lower the motor from the seat, but i did see a youtube video that may have answered that for me.

I did this to my ascend last year it was tricky. A lot to try and write down. If I get time later I'll pm you with some insight on how I did mine

i can already tell it's a little tricky....  and electronics/engineering are not my strong suit.  any help you have would be awesome!  i'm not diving into this project head first, but gathering all my facts in the meantime.
