I am having a little trouble finding out what hook size these are.  Does anyone know?  Evergreens website only lists a phone number to call as far as I can tell.

I don't have an answer for you but if you take a lc pointer & compare hook sizes the lc baits descriptions like on TW will show what the hook sizes are.

Great suggestion Dwight, I will do that.  They should arrive middle of next week I hope.

I found out they are a size 6 - I was thinking of putting Owner ST 36 or ST 41 - thoughts?

Go with the 36. The 41's are a heavier gauge wire.
