I don't see why it wouldn't work. I've drop shotted just about every piece of plastic to come out of a mold. However, with a fly, you'd have to be pretty well "tuned-in" to your presentation. What I mean is that with drop shotting plastics, the fish will probably hold onto your bait a tad longer, giving you a good opportunity for a hookset. With a fly, I think they may strike and eject faster. But I could be wrong.

Yep... 5" black leach pattern (lightly weighting the hook shank works better to drop shot with)

Sorry to revive this post, but thought id put my two cents in. 

Depending on what type of drop shot fisherman you are,i would recommend two flies. If you twitch like  poppoppopopop, .01 second pause, then tie in a weightless minnow pattern fly.  If you like a steady cadence and allow for a 1-2second pause, then use weighted fly like a sculpin head or a clouser. 

Dropshotting flies are too good to be true. They work so well and almost every bite is a guaranteed hookset since the hair just moves out of the way and its straight hook.
