Long weekend trip to DFW

So at some point in the near future  I will have the opportunity to take a 3-4 day trip to Dallas to do some fishing. Specifically, I want to fish for largemouth. I’m willing to pay for a guide also. So I have a few questions:

1. What time of year should I be going? I would like to go in the fall. Am I better off waiting until the spring so I can fish the spawn?

2. How do guide services work? Do guides specifically fish one lake, or do I tell them what lake I want to fish and we go there?

3. Does anybody know any guides in the area?
