Just received two packs I ordered online and found they are hollow. What’s the advantage/disadvantage of this?

Less 'meat' for the hook to drive through compared to a solid body plastic.  You could also possibly insert a rattle or some scent, if that's your thing.

I got the baby ones. Can they be used on a chatterbait?

They work well t-rigged. The hollow body allows the hook the get into the fish very easily.

They have a nice active action because they are hollow too. Not enough plastic to hold well on jigs though.
