What would your ideal setup to skip with a baitcaster?

Daiwa SV spool.  Rod depends on what you want to skip.  Ned rigs and other finesse offerings, senkos or jigs?  Rod length short enough to not smack into the console of your boat on a roll cast unless you are pitch skipping.

Are you always using ex-fast rod?  On my baitcaster im doing heavier baits, dions classic spider grub on 3/16-5/16 jig head, or just a regular jig.

Rod length is a great consideration, I’m only 5’7”.

Once you've gotten down the mechanics of skipping you'll be able to use just about any rod. I'm usually pitching 1/2 oz igs, almost an ounce with the trailer, using a Tatula SV on on a Tatula XT 7'3" HF which is a pretty stiff rod. If I roll up on a dock I'll skip with the same setup still in hand even though it wouldn't be my first choice. Light plastics like weightless senkos and creatures get skipped using a 7' MF or a 7' MHEF. My fav for that is a Powell Inferno 703 CEF 7' MH extra fast. It's a super light rod and it's affordable.

I use them all but prefer a fast to medium fast action.  Now that you mention it a twin tail hula grub on a jig head sounds like a great bait for under docks.  Swim it, let it fall or bottom contact.  I mostly skip wacky senko knockoffs , ned rigs and power shaky heads.  For me the longest rod I use for a roll cast is my 7'2" Zodias or Orochi PP.

I have had good results skipping that hula grub into the 12-18 inch gaps of the foam and metal framed docks.  It takes a lot of practice to be able to hit the open space instead of the dock...always nice to get into a rhythm with it.  Something about those spaces that works really well.
