I'd keep the water away from bearings. Whichever solvent you choose to use, there is no need to mix & match. Spin the bearings and make sure all solvent is evaporated prior to lubing.

How do you suggest I spin the bearings?

Just a good spin each direction with a flick of your finger. Leaving the bearings out to dry is fine. Better to be all solvent is out than to have lube contaminated.

Is it okay to leave the bearings out to dry for a day after soaking it in Acetone?

I place them on the end of a pencil and blow dry with canned air or an air compressor. If you don't have access to either of these, a couple spins with your finger and then let them air dry will work fine.
