For those taking advantage of any fall trout stockings in a few weeks, or for those with leftover trout still in the freezer, here's a way to fix them up.

3-4 Trout Fillets

Flour

Seasoning of Choice

Peanut Oil

Fillet trout fillets by cleaning out the insides and thoroughly washing the inside with water.  Remove head and tail and all other fins.  Do not remove any bones.  After the fillets are cleaned, mix seasoning with flour and pat all over the trout, including on the inside of the fillet.  Cook fillets in a pan with the peanut oil for about 5-7 minutes, and remove.  Serve with ketchup.

I absolutely love this recipe.  The best thing is, after the fillet is cooked, you can take the backbone and it will peel all of the bones out extremely easily.  You can scrape any remaining meat off the bones.  This utilizes all of the meat and doesn't waste any.

This might sound sick to some of you guys but I fry my trout fillets in bacon grease.  The way of the South.  Everything taste better in bacon grease.
