Well it is 3 days after the official turkey dinner and my wife told me to finish the turkey because she is done with it. There is still about 3 pounds of white and dark meat left and I am tired of the turkey and mayo/miracle whip samiches. Can you guys give me any ideas on some way to finish this bird other than using it as bait?

Turkey casserole.

LEFT OVER TURKEY CASSEROLE      

4 c. turkey, boned & cut in sm. pieces

2 c. macaroni

4 c. turkey broth or chicken broth

1 c. Velveeta cheese (approximately)

6 slices bread, toasted

1 stick butter, melted

Put prepared turkey in 8"x13" loaf pan. Layer macaroni over turkey that has been cooked in water until done and drained. Heat broth in pan and then thicken with flour, then add Velveeta cheese and continue to heat until cheese is melted and has a very cheesy taste. Pour over macaroni and turkey. Toast bread and break. Melt butter in skillet, add broken pieces of toast and stir until bread has absorbed butter. Spread on top of casserole. Heat in 350 degree oven until heated through, approximately 30 minutes.

You can use more turkey than 4 cups....But that's how my mom made dinner 2-3 days after thanksgiving to get rid of the rest of the turkey.It fed like 5 of us during dinner time.

Just definatley toast the roll or else it will get soggy and fall apart.

Turkey a la King is one of my favorites. Just cut turkey up and cook in with a gravy ,sliced mushrooms, and onions. Than serve over white rice.

My favorite. I've been making that sandwich for years. For me, I skip the mayo, and spread the cranberry sauce on the roll. I like to use italian rolls and don't toast them. Eat them as fast as I do and they never get soggy.

dang readin this made me hungry...I'm gonna go see if we've got any turkey left!

same here. i just went to make a sandwich but then realized I don't have any bread... >:(
