Deer Jerky recipes

Featured Replies

Yesterday, I killed my first Tennessee buck with a 270. Jerky is one of things I've been craving for a long time. Does anyone on here have any secret recipes that you want to share. This will be my first time experimenting with it and could use some great recipes.

This is for one pound of meat, sliced thin:

1 cup Worchestershire sauce

1/4 cup Brown Sugar

1/8 cup fresh Black Pepper

Tablespoon each of Garlic Powder and Onion Power (or not)

Marinate forat least an hour up to overnight.  Dry however.

You want it spicy, toss in a teaspoon of cayenne.

You want it asian/terryaki, use soy instead of worchestershire, honey instead of brown sugar and toss in a teaspoon+ of dried ginger.

Thank you very much for the information. My first batch is marinating right now up to 48 hours. Tell me what you think about these ingredients? ( wondering if it will taste ok).

1. Liquid smoke

2. Worchershire sauce

3. Soy sauce

4. Brown suger

5. Accent

6. Canadian steak seasoning

In about 4 days will be the big test.

I'm going to go get some garlic powder for the next batch. That is exactly what I'm missing.

here's one i use all the time.

2 cups liquid smoke (natural hickory flavor)

2 cups worchershire sauce

2 cups soy sauce

6-12 oz texas pete hot sauce i use 6 oz

about 3 to 4 lbs of meat.

marinate over night-right before putting in dehydrator or oven (i use oven at 150 deg. with oven door left open with a 1 inch crack at the top.) lay strips on a paper towel add a little black pepper to the top of each strip. turn jerky every half hour until done (about 4-5 hours)

I put poultry seasoning on every piece once it's been put in the dehydrator, also if you have a CO-OP near you see if they have any crockett farms( I think that's what it's called) marinade, did the last batch in it and it's pretty good.
