catching soild white bream

i was fishing yesterday and started catching bream for live bait and all the bream that where about 30 feet deep came up were white with lite blue tent after awhile in the bucket they would change back to the right color but some stayed white :how is this and why

Adaptation to the environment.

Water temp,  water clarity, and the most important variable is probably stress.  When a fish is highly stressed they will usually change colors allot from their original patterns.  Spending time in a bucket would stress me out a little too.

They were deep, less light makes it down there so they adapt.  Ever caught a bass out of really cold, muddy water?
