I was wondering how I could build some enviroment friendly structure to sink in my pond...Thanks

Well depends on what you call enviroment friendly. You could sink some trees and create a brush pile or go so far as to construct a rigid PVC "plastic" brush pile that will never rot or leach anything into the water on the other hand it will be around long after your gone as well.

The best and easiest structure I have heard of is those cheap plastic patio chairs that Wal-Mart sells. People are throwing those things away all the time. Tie a brick to the underside of the seat on about a two foot rope and sing a bunch of them in the same spot. They will last for ever. And never hurt the environment.  

PVC trees are the way to go.

you can go around after c-mass and collect all the old trees and sink them ,thats what me and a few buddys did one year and its been 2 yrs there still there a liitle rotted  but there,,, goodluck

Don't forget gravel, rocks, and stones.  This is a natural way to impede vegetation and to mix things up.  They were here before and will be after you go too.
