A couple jigs I made
Here are a couple jigs I made. The first jig I call sunrise craw(on the left), its next to a PB&J jig I have. The second jig I call the cherry bomb and the third I call the midnight run. Both are football heads.

top water tips?
Typically first of the morning or after the sun goes down. Throw Rage Tail Shads, buzzbaits, frogs, pop r's, zara spooks near lilly pads, edges of grass, isolated grass patches, along boat docks, and across main lake points. When a fish takes the lure, wait 2 seconds before setting the hook or run the risk of losing the fish, let him take the lure all the way.

Storage....
I use a binder for my tubes and NetBait Paca Chunks. I put everything else in a duffle bag just because I havent bought more binders. I can find what I want pretty easily since I prepare for the lake Im going to and stick the bags of plastics I feel I would use the most on top. I still leave alot at home on the wall because I dont need all my stuff with me when I go out. I personally wouldnt put my soft plastics in a plano type box. I fear that the heat will melt them while on the water on a hot day. When Im home, I store them all on a peg board at home in the basement.

Problems setting the hook with jigs
Here is what I see wrong with this senerio: 1) rod not beefy enough. I use a 7' MH fast tip AllStar rod. You want a rod with good backbone. 2) I didnt see where you stated what line you are using, but I would go with 50# braid. You can tie a palomar knot easily with it and dont have to worry about break offs like you do fluro if you dont tie your knot properly. If you dont want to shell out money for braid, 17# Suffix Elite will get the jog done. IF you go braid, you dont have to reel all the slack up, just get it going and cross her eyes!!! The no stretch of braid will do its work. 3) Dont baby the hookset, you have to get the hook past the weedguard and penetrate the upper jaw. Dont be afraid to miss a hookset, its going to happen. Like I said before, cross her eyes.

When to use a jig-n-pig?
I always have a jig tied on. I will flip mine near fallen trees and brush. I love to flip it into grass as well. Find open pockets and lay it in there quietly. I personally use NetBait Paca Chunks for my trailers. And dont be afraid to use a different color trailer than your jig from time to time. I highly recommend using braid for this set up as you usually are in some nasty stuff. I have caught fish in open water too with jigs.

Rage Tail Baits
The rage tail shad are awesome and produce great disturbance on the top. I'd fish it right thru the grass or just on the outsides of them. as for the lilly pads, I would fish it right on the edges of them. I have not used any of the other rage tail products yet but I have heard nothing but good things about them. and yes, the rage shad has held up longer than senkos, heck I think most anything does.

Fishing deeper water
To expand on what WRB said, dont forget roadbeds as well. A good topo map will help you locate those roadbeds as well as the main lake points you want to hit. Electronics is key when fishing deep water. Finding those little humps or even the creek channel are key. I would definetly use a c-rig, deep crank, swimbait, heavy spinnerbait, spoon, and drop-shot rig to work these areas. Oh, and a lipless crankbait is good too.

My name is Mike and I have a Fat Head!
You could sew a piece of white cloth into the back of your hat. that way it covers your neck and when you dont need it, just tuck it into the hat and wear the hat like normal. Baseball hats have an inner lip/flap that you can sew that fabric to and not alter the outside of the hat.
