I'm new to the bass fishing world, mostly used to shore fishing and open water. Recently I purchased a new star stellar lite rod 7' medium-light and was curious if it would suit my needs well for fishing large mouth bass with Jigs in Florida. Any opinion would we helpful.

Crappie jigs maybe. Jig fishing in Florida the least I would use is a 6'6" MH. ML rods would be better suited for finesse baits and drop shotting in super clear water and very light line.

Fortunately I have only used it several times and can still return it. would just a medium be better or definetely go with the medium heavy?

MH if you have any intention of using for jigs.

Med are better suited for weightless trigs and crankbaits/lipless.

Welcome to BR, Medium light will serve you in other applications, however not for bass jigging.  My personal jigging outfit is a 7'3" MH with a fast tip.  You didn't mention the the type of line you use, but I use 40lb braid if that helps you any. 

I think that I may have that rod. If I do, it has been used for throwing unweighted Shrimp and light jigs on saltwater flats and it has caught plenty of inshore fish that roam the flats.

I find very little use for any rod lighter than a medium here in Florida. Salt or fresh.

The fish are too big and the cover too thick.

To throw a bass jig, you really should be looking at a 6'6"-7' mh/f.

For bass fishing, if I were only going to have one rod, it would be a MH power, preferably in a 7' length. If you need a shorter rod, go with a 6'6". 

Welcome to the forum.  I assume you are talking about a spinning rod.  I have a 7' ML Hurricane Redbone casting rod.  These are listed as saltwater rods.  It is rated for 3/8-3/4 oz.  This definitely puts in in the Medium Heavy power range for most companies when talking about freshwater rods.  My Medium power Falcons run 1/4-1/2 oz., MH from 1/4-3/4 oz.

 

The Slellar Lite 7' ML is rated 1/4 -5/8 oz.  It would normally be considered a Medium power rod for bass.  I have a Smoke Medium Fast casting rod with the exact same rating.  You should be fine for open water fishing.  Also don't be afraid to try lures a bit heavier.  SirSnookalot has often stated that he throws lures heavier than the rod is rated for with no problem.  He has some Hurricane and Stellar rods.  There is a good chance he will see this thread and make a few comments.  He fishes waaaay more than me.

You should be throwing unweighted plastics like Zoom Trick Worms and Zoom Super Flukes. Put a 2500 size spinning reel on and spool it up with 10 to 15# braid and you could have a lot of fun. That rod has more power that my Loomis CR721's and I have caught bass (not big bass) around moderate cover.
