I want to start pouring my own plastics, but i have a few questions.

*can i use two regular hand injectors to do laminate pours or can i just buy an adaptor?

That depends on the type of molds and the type of injectors.  For some it takes different tips and an adapter.  If it is a pour mold take it apart pour one side, put it together and then pour the other side.  You might even be able to do that with an injector.

I like Calhoun's medium

About the same as a jet plane compared to a Corvair, Ugo or Omni depending on your knowledge base.

If you are just gettin' started, I would recommend pouring instead of injection. It is much simpler and sometimes just as quick, depending on your molds. I still don't use injectors, and I run a business off of it.

And if you are planning on making them for personal then aluminum molds are not needed. The aluminum molds will produce twice the quality of baits than any other, but for personal use, it doesn't really matter.

I would recommend Bears Baits custom plastic. It's a little cheaper than Calhoun's and I personally can't tell a difference.
