I have seen guys use truck liner in lieu of carpet on the interior of their boats and it seems to have worked well.  

 

 

My advice is to test it on something else first. It is not easy to remove if you changed your mind

I would be very leery of making the inside of the boat all black. Standing on that all day in the summer could get very overwhelming.

I agree, but the boat would have a deck over it...not sure if it would still be hot, also there may be other colors like a light gray that may be better.
