For the anglers out there that have experience with these, just how waterproof are they?  I'm curious to try them (as I'm looking for a pair of bibs right now) but the fact that they only offer 10K waterproofing and 5K breathability makes me skeptical of their ability to keep you dry.

It's lighter than you'd expect but keeps you warm and dry. I had an issue with my last set when I was out with Keith Poche as a BASS Marshal my zipper split apart while the jacket was zipped. Huk has a trailer at all BASS events they took my old one back and replaced it no questions asked.

That's good to know.  Does the waterproofness compare to gore-tex?

I never had any issues with water. I don't know if there were many days that were those all day rains that I fished in though. Like I said I'd expected them to be a little heavier for the price but they are quality.

I've heard good things about Stormr too if you want something to compare to pricewise.

I actually just ordered a pair of the Stormr Aero bibs but sent them back.  They were nice and seemed like really good quality.  I just didn't care for the fit.  

I assume you see that Huk has good sales on their website right now. That's a good price for the Next Level gear. You got me eyeballing bibs right now even though I shouldn't spend the money. Go for it. They look sharp too.

Haha yeah.  It's a solid deal for sure.  I've also found the Aftco Anhydrous bibs for about the same price so my heads spinning a bit.  I even just ordered a pair of the Simms Challenger bibs because they were $99 on fieldandstreamshop.com.  Should get those tomorrow so we'll see what they're like.
