This will be my first Kayak and will be used primarily fishing the Forest Preserve lakes around me. I will be fitting a small basic fish/depth finder to it.

I use a lifetime tamarack angler I bought it on sale for about $180.

Take a look at a Perception Pescador Pro. 10 or 12 ft, it's light and easy to load & unload.

what does budget mean to you?  The pescador pro is one of the best in the sub $1000 range.  under $500 you are kinda stuck with the big box store specials or try to find something used.

I have a Lifetime Yukon.  It's a really nice boat for the money.  It tacks well, is moderately fast, and I can even stand up in it.  Plus the seat is super comfortable.  It's more stable than the Prescador Pro, but not as fast and a bit heavier.  It's also a few hundred cheaper, so it's definitely another one worth considering.
