Can anybody tell me if the trim in the photo is the right kind for a hatch made like the other photo? The rim height is about 1/8". What height trim should I be looking for - 3/8" or 1/4"?

I don't think that is going to work.  I assume you're talking about the silver lip that goes into vertical into the hatch.  The trim you have in your hand is meant for going over a flat metal like sheet metal.  it won't have enough grip to hole what looks like 3/8" of metal.

I'm talking about going over the sheet metal lip around the top of the hatch (beige).

In that case (the sheet metal lip in the later picture), I think either of the products will fit it just fine.  Then the only question is where does the water go that get down into the track of that sheet metal.  The rubber will stop it going into the hatch side of the sheet metal, but there is still a U channel for it to collect.  Are there drains?

There are not drains. I don't understand why they don't put those. I hoped this would make it better than it is currently. I wonder if I could drill a small hole? Would that drain into the bottom of the boat and to the bilge?

i am going to have a similar project on mine this winter.  Mine just has flat sheet metal (with rubber trim) leading into the main hatch and live wells.  The trim isn't perfect and even if it was the water would pool on top of the sheet metal.  I'm going to put in a drain hose so it goes down through the floor of the hatch/cubby.  There is already a drain there, but enough water comes through the hatch opening that it soaks the boxes inside.

 

Just drilling a drain hole in the hatch lip won't help.  It will still drain right down into the hatch itself.  The drain has to be connected to the bilge area somehow.
