what Is Your Favorite Fish Or Hush Puppy Receipe?

After seeing Redlinerroberts receipe I realized a need to jazz up my cooking so I am looking for new receipes for fish and hushpuppies. Having always purchased mixes, I am ready to crank it up a notch with some home brewed stuff. If you have a favorite receipe, share it with us for a taste test.

For any kind of sole, preferable a thin filet like flounder.

Stuffing:

Bread crumbs, pepp farm seasoned stuffing (in ziploc w/ bread crumbs, give an extra crush to make it all finer)

spinach, blanched and drained well

10 oz crab meat

Chopped garlic

Pine (pignoli) nuts

red bell peppers diced in tiny squares

combine all ingredients and then add a butter/water mix till appropriate moistness is achieved.

roll stuffing in filet and toothpick to hold shut (soak toothpicks in water for an hour and they won't burn in oven)

sprinkle entire roll w/ bread crumb-garlic powder(not much) mix.

375degrees till done

Trout a La Meunière

Prep Time: 15 minutes

Yields: 6 servings

Comment: While this receipt calls for Speckle Trout many Cajun anglers substitute Rat (small) Reds.

Ingredients:

6 (7-ounce) trout fillets

½ cup vegetable oil

2 cups rice flour

1 cup egg wash (1 egg, ½ cup milk, ½ cup water)

Salt and pepper to taste

1 pound of butter

Juice of 1 lemon

1 tbsp minced parsley

Method:

In a heavy bottomed saut é pan (skillet), heat oil over medium-high heat. Separately season flour and trout with salt and pepper. Dip trout in egg wash then in flour. Saut é 3-5 minutes on each side or until golden brown. Remove and keep warm. In same skillet, melt butter over medium-high heat until it browns around the edges of pan. Squeeze in lemon juice, and add minced parsley. Serve over saut éed trout.

I got this recipie for Husppies from a K-Pauls cookbook a long time ago, in Paul Prudhommes cook book I found the same recipie on line IT"S KICKING >> NOTE you can get corn flour at Wal-mart or any health food store!Here it is  Paul Prudhomme's Hush Puppies

Ingredients

1 cup cornmeal

1/2 cup all-purpose flour

1/2 cup corn flour, available at health food stores

1 tablespoon baking powder

3/4 teaspoon ground red pepper, preferably cayenne

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme leaves

1/4 teaspoon white pepper

1/8 teaspoon dried oregano leaves

Other Ingredients:

1/4 cup green onions, tops only, very finely chopped

1-1/2 teaspoons garlic, minced

2 eggs, beaten

1 cup milk

2 tablespoons pork lard, unsalted butter, vegetable oil, chicken fat or bacon drippings

Vegetable oil for deep frying

Instructions

Combine all the dry ingredients in a large bowl, breaking up any lumps. Stir in the green onions and garlic. Add the eggs and blend well.

In a small saucepan bring the milk and lard (or other fat) to a boil; remove from heat and add to flour mixture, half at a time, stirring well after each addition. Refrigerate 1 hour.

In a large skillet or deep fryer, heat 4 inches of oil to 350 degrees F. Drop the batter by tablespoonfuls into the hot oil. Do not crowd. Cook until dark golden brown on each side and cooked through, about 1 minute per side. Drain on paper towels.

Yield: 5 servings

So is a hush puppy like a clam cake?  Or a fritter w/o sugary stuff?  Just not familiar with the terminology, but the ingredients sound like it would be similar to a clam cake.

Yea its similar I have tasted them with bits of chopped oysters in them but I prefer the "fritter" variety in the KPauls recipie. Antoines in Austin used to have some mean puppies also

So, the main additive to a clam cake that makes it aclam cake is chopped clams. What is the main ingredient for hushpupies, is it fish? little chunks?

This actually sounds alot like the stuff on a corn dog.  I've never had one but the yellow appearance is making me thing "corn"

No LBH The Fish Part is usually Cat Fish Filletes some times red fish,spotted trout(up here they call em weak fish) and crappie  I have also had them with fried oysters

I take the easy way out with the filllets

I drag em through a mixture of Egg,1/2 and 1/2 with a little Wosthrshire and Tobassco

then in a paper bag I shake them in ZATARANS FISH FRY which is preseasoned and based with corn meal

You Fry up your filetts in Veggie Oil and serve them up with those puppies

Quick and healthy...Tilapia ( fresh or frozen filets from Sams Club ) fresh lemon...fresh dill...season. 350 degrees till flakes. Awesome!!! Great protein and good fats.

OK, I'm going to give you my secret fish batter recipe, then I have to hunt all of you down & kill you. ;)

Not really, but the next time you fry fish, try this. It is very simple to do.

In a stainless or glass bowl mix the following...

1 cup of cream or 1/2 & 1/2 (whole milk will do in a jamb)

3- whole eggs (no shells) lol

1/2 cup of yellow mustard (don't substitute spicy/deli type)

3 tsp of salt

4 tsp black ground pepper

Mix this with an elec. mixer or beat it with a wisk untill smooth.

Soak fish fillets in the batter for about 5 minutes.

Mix 2 cups of yellow corn meal with 2 cups of 4-seasons itallian bread crumbs.

Coat the battered fish in the breading mixture and fry as you would normally.

Mustard is the magic. 8-)

A Hush Puppy to me is basically a fried ball of bread.  Your corndog thinking is pretty much right on.  Like that without the dog.  I've also had them with various things in them like clam, crab, and lobster.

Ronnie,  very similar to a  way we grill large striper filets up here.

mayo and mustard mix (again, has to be yellow)

take some tarragon flake and turn it to dust, just a little for flavor
