I have a couple of turkeys on the smoker.  I can't wait for a smoked turkey sandwich on a fresh cooked roll with cranberry sauce.

We are planing to make one out of a some pipes, 2 tin garbage cans, and some grilling racks, for Christmas, to cook the pig or goose on. You have any special rub, that you put on the turkey that you would like to share? :D

I tried smoking a turkey once. I couldn't keep it lit. Ba Da Bum :D

The Turkeys are done!!  Just a basic rub, nothing special, but they were injected with a garlic creole marinade.

I'll be placing my turkey on the smoker in the morning.  Having grown up in Cajun Country I have injected it with a garlic/onion/secret ingredient mixture.  The turkey will be soaking in a red wine and spice mixture overnight.  Tomorrow it will go on the mesquite-fired smoker.  I'm already getting hungry.

Will be going to the in-laws tomorrow to eat, I'm making sage dressing in the AM, and I have sweet potatoe pies cooling right now.
