We had a fantastic LSU crawfish boil today.

The crawfish were excellent.

The Cajun guys cooked 560 pounds of crawfish, 100 pounds of potatoes, 50 pounds of corn, and about 5 pounds of onions.

Murphy prepared some of the best jambalaya we have ever had. It was out of this world.

Kyle LeBlanc of Raceland, Louisiana, our crawfish farmer who sent the crawfish, included some excellent alligator/pork sausage; Andouille; Boudin; and Pouche's Pork Sausage as lagniappe.  They were super, especially the alligator/port sausage.

We also had hot dogs.

Everyone had a great time.

The Billy Cannon/Les Miles autographed football went for $550 at our auction.  We made over $1,000 with our auction items, including a women's basketball autographed by the coach and a LSU baseball autographed by last year's College World Series team.

To say the least, I am exhausted.  But it was worth every minute and everyone had a great time.

I used to have a neighbor who was from Louisiana and he would bring back a tub full of them.Best party i ever been to...I must have ate at least 50-100 of them...

Translates to "Oh, that's good!"

Back in the early 90's, before I started teaching for the college, I did some business in the deep south. Sometimes my clients would take me to dinner. My two favorites were a Pig Pickin, and best of all a Crawfish Boil.

My wife doesn't understand, she always asks "You're eating bait now?" She's pretty open minded, however I can't get her to try the crawfish.

Hey Sam, because of your post, I'm going to take my wife to Fishbones for dinner tonight. They're Cajun food isn't as good as the real thing, but it's a fair substitute.
