I have two snakeheads on ice that I wanna eat. One is 8 pounds and one is 7 pounds. I was plannin on just eating the tail sections and maybe toss everything midsection and above out for the coons. From what I hear the tail is the most tender part and I would assume like most fish probably the sweetest tasting part too. Any suggestions ? Should i chop some up into bite size pieces and deep fry them, maybe cut them into steaks or just fillets ? I have enough fish to probably try several different ways. I need some ideas from anyone who has eaten them before.

Just get big fillets from the gill plate down to the tail. There is so much thick meat up by the gills that it would be a waste not to fillet the whole thing. From there, just cut the fillet into small pieces and fry them.

i agree,that how i cook all my fish no matter what,but i release everything but trout and salmon

Gut the fish and rinse.

Place fish belly up and stuff the cavity

with butter, lemon wedges and basil.

Salt & pepper to taste.

Transfer fish to a cedar shingle.

Bake, uncovered, at 350* for twenty

minutes. Remove fish and serve cedar

plank with potato salad and bread on

the side.

I've done that with salmon but never a white fish like snakehead. Might be worth a shot next time.

LOL, think of serving that ugly fish to your date or gf, like how RW described preparing. I'm sure its good, but boy are they ugly looking fish
