Can you swim
I'm hardly a world class swimmer, but I can keep myself alive if the need should arise. You might be able to find a swimming class for adults. I definitely recommend that you and your family learn to swim.

Scouting
I did this a lot when I lived in Florida,. I think the best way to scout an area is to use both in person visits and web tools like Google Earth and Navionics web app, to name a couple. Now that I’m in Kentucky, I don’t scout places in person. It’s too much of a bother driving 30 mins. or longer just to get to water. So, I now depend on web tools and a book of lake maps. I do miss those scouting trips.

Caught this out of the river a few years ago and still don't know exactly what it is. Thoughts?
What river did you catch it on? It looks like either a shoal bass or coosa bass. Knowing what river you caught it on would let me know which one it is.

Leak in my 9ft plastic boats hull.
I would plastic weld it. If it's made of polyethylene, epoxy will not adhere to it. You can find videos showing how to plastic weld and sources for equipment and material on Google. It's not that costly.

Rod, reel, line for Alabama rigg?
I haven't used an A rig before and need some advice on the type of rod, reel, and line to use. What rod should I use? (Length, power, action) What should I look for in a reel? What line should I use? (mono, fluoro, braid) and what line strength? If you have particular makes/models of rod, reel, line that would be great. Otherwise, advice on what to look for is appreciated. Thanks for your help. Hauling A Pelican 10E In Pickup Question.
There are tongue extensions that you can use for the trailer. I think they're typically 3 ft. which will probably give you the room you need. I transport my 13 1/2 ft kayak in the bed of my truck. I leave the tailgate down though. To secure it, I run (2) straps from the front tie downs in the truck to the side grab handles on the kayak. Also, I load the kayak stern forward. The stern of kayaks are wider than the bow, so it's more stable/secure in the bed this way.

One quick tip. As you approach the ramp, roll the drivers side window all the way down. This way you won't accidentally lock yourself out of your truck.

Need To Find A Good Kayak For My Height??
Fry, it looks like you fish on lakes, lake Hartwell in particular. Perception has a kayak called the Pescador 13 available through Gander mountain. Perception kayaks is owned by Confluence water sports. This is the company that also owns Wilderness Systems kayaks and a couple of other brands. The Pescador 13 is a rebranded older model Wilderness Systems Tarpon. I would recommend doing some research on this boat. I know kayak anglers who have them are happy with them. I have seen a 12 foot version at Academy sports. Personally, I would not go smaller that 13 ft on a big lake like Hartwell. If you get a chance to fish from a kayak, do it. Even if the kayak you get to paddle is not what you are looking for. Any experience you gain will give you insights into what you want, what you like, and what you don't like.
