being in country clubs one needs to be a specialty in many aspects of food. members somewhat do not follow menus and so need to b ready for anything. do like french and northern italian cuisine on my menus. yes folding the tail under is good and then turn the fish on the other side a better presentation.

hello again being new i dont know,,,are there areas along the castic lake where one can fish from shore?? and since Piru lake is just mins away are there areas to shore fish? thanks

Chateaubriand bouquetière we cooked this to order many times. most think use a center cut filet mignon/tenderloin and roast. but i used the center cut but then butterflied it and then used a double meat rack so the steak doesn't "puff" or shrink so it takes a long time. then garnish with the bouquetière vegies and dutchess potatoes on the side bearnaise' sauce. but i used to order tenderloins cleaned 100% and we called them chateaubriands, cut them into steaks or roast them whole. the different cuts one get out of a chateu' are the fillet migon-tournedos-medallions- and grenadines, basicly form the ends. i always cut the fillets what ever ounce but then wrap them in a towel and pound them out roundish somewhat so they cook evenly .have cut many a rib eye-top round-top butt-delmonico steaks-strip steak. now then clean a double rack of lamb with no band saw!!! by hand!

WOW Fish n Fools nice place, tons of stuff.. thanks and not too far one last think about the lagoon. might have to fish from the shore for some time. should i be aware of any "critters" around that shore line? eg. snakes etc?

just back from a visit to Tackle Express. Small but loaded. tons of plastic baits. will line spools i do think. nice place less then a 1/2 hour from my house

ok know where that is at as i get my meds from sams down the street!!

i stopped by the deli/bait shop near the lake and asked how the fishing was at the lagoon a was told not very good now as water is being added to the lake from the main lake(i guess). but was also told it gets better latter. also is there a bait shop close to either piru-castic-pyramid-fillmore-santa paula? or is there one in ventura? ?or do i have to drive down to the 215 and visit the bass pro shop in rancho cucamonga?
