Forschner knives are what most commercial fisherman use I grew up in a fishing family. Otherwise dexter russel. Both have great steel quality good flex and great steel that takes to a stone very well. Can find both on eBay pretty cheap

Mister Twister. Best thing you could buy. Has saved me hours of fish cleaning, especially during crappie season.

My uncle is a guide and he sometimes cleans the fish his people catch. He just buys an electric one. I prefer the non-electrical ones. I will look into some if the ones y'all listed.

Buck Clearwater. 6 or 9 inch blades available with two different kinds of steel. 420HC works very well, I don't know much about the sandvik blade though.
