Is this too much?

Its good.  I have not had that exact thing, but we make something similar in the smoker.

Ours is kind of the reverse of that.  We press out loose sausage in a cookie sheet, layer with cooked bacon strips and bleu cheese crumbles.  Roll it and slow cook it in the smoker.

Very tasty.

I like how they lattice the bacon on the outside of it.  There pictures are much more "pretty" than ours usually look.

Fishin,

No, it's not too much.

Just make sure you have health insurance to pay for your heart attack after you eat that thing.

My arteries just clogged looking at it.

Bet it tastes great!!!  :D

That looks like something Paula Dean would do a show about....actually, I think I saw her eating one of those at some point.

I'm not gonna lie, I would probably try it.   ;D

It should have some smoked cheddar rolled into the middle of it.

If Paula isn't eating a pound of butter of day, she's not getting her daily allotted allocation of fat. Can't stand that women. ;D

We call them smoking a fatty around here.  Roll out whatever ground meat you want to use, insert whatever fillings you want, wrap in bacon, and smoke over some hickory and apple.

My favorite is brat sausage, mushrooms, jalapenos, hashbrowns, cheddar cheese, and garlic.  If this weather stays how it is I am going to have to fire up the smoker soon and make a few.
