Just caught a pile of crappie last couple weeks.   Just wondering if you all had a good crappie recipe to share.

Here's what I do. It's simple. Clean 'em and scale 'em. Don't fillet unless they are big enough. Get a frying pan going with about 1'4 deep oil (your choice) Beat a bunch of eggs. Put a mess of flour in a bowl and add lots ofsalt and pepper. Once oil is really hot dunk the fish in the egg and then roll in the flour and then fry. Don't double dunk in the flour if you don't want a thick crust. Very simple yet very tasty.

Coat the fillet in flour than dip it in beaten eggs, then coat it with bread crumbs. Put salt, pepper and some cayenne pepper in the bread crumbs. You can experiement with different seasonings too. Keep enough oil in the pan so it comes half way or a little more up the side of the fillet do each side till its nicely browned.

Take fillets dip in beaten egg with milk, then proceed to cover with a mixture of 1/2 cornmeal and flour with a healthy portion of salt, pepper, and pinch of lemmon zest. Do not overheat oil, about 350 degrees is good. i fill a pot about 3/8 full of oil[ i use vegetable] and when they start to float give them another 20-30 seconds. A good size fillet 13'' fish should only take a couple minutes. Don't add to many pieces at once you can cause oil to overun or it might bring oil temp down. I like to serve with home fries and coleslaw with slices of tomato on side. oh dont forget budlight. enjoy!

run thru an egg wash.

then coat in plain old cornmeal.

pan fry to perfection.  (then add just a touch of salt, while still moist)

chop (in med. to large pieces) a plain white onion.

done...

when you eat the fish, top it with a piece of the raw onion.......... amazing!!!!!!!!!

plain, and great..... i do this for most all panfish, and is my favorite for catfish as well!!!!!!!
