Your actually looking for fresh water that has peacock snook and tarpon I assume? Don't know of peacock in brackish water.

Is that mostly from the storms last week? Couple guys I talk to that fish the KOTG series said most of the water had finally gone down last weekend and only a few were able to fish the flats.

From what I've heard the Holiday flats have pretty much dried up. Levels are getting low and most fish are in the canals.

Most likely because the big females have now moved off the spawning grounds in search for food. Most of the spawn seems to be largely over.

Lake Kissimmee
Was there a couple weeks ago for a two day tournament. Jacks was a productive area just nothing of any size. Also caught a few big ones in the NE area of the main lake flipping the areas of live grass against the dead grass.

Gators N' Kayaks
Although I don't personally recommend fishing from a kayak here in Florida, however if you are going to and are being approached by a gator which WILL happen. Make as much of a commotion and noise and try to scare the gator away before it gets close enough to attack. Stomping your feet and the vibration normally works pretty well to keep them at bay.

Do it!!! Depending on your height I would recommend staying closer to the 7'6 area for your punching. I have two rods 7'10 and 7'11 and use my 7'6 the most here in south Florida.

Central Florida Tough Fishing
The weather has been a little bit cooler then usual but the major thing effecting the waters and tough fishing is the amount of rain we've gotten. Spreads fish into areas normally not reachable when water levels are normal.

peacock bass in memphis tn and smallies
I agree!!! I'm wondering the same thing as we had a recent die off down here in south Florida due to the temps creeping just below 60*. They just can't take the cold. My other question is how living in a much colder environment are they achieving weights near 19lbs as the OP stated? The record in south Florida is right around 10lbs which is a monster here in the US.

Fishing Near the Alley from Shore?
Still kinda spotty. The changing winds and fronts moving through has a lot of these fish either lock jawed or in the thickest stuff around to get out of the wind. Wind has been stirring up the lake and it's hard to find clean water. When or if you are able the fish are definitely there. Nothing like it should be and can make for some weird fishing the rest of the year.

Punching baits. Fish the nastiest cover you can with the wind at your back. Fish deeper then you think you should and use 1.5-2 ozs of weight to get it through the matted grass and reeds. Anything black and blue will get you bites.

You may be very correct, however HOW you get to the place where your going to make your next cast would be of nobodies interest. Once your bait hits the water, the color, bait itself, and presentation are what most are here to learn. That remains true whether fishing from a platform or the shore. The never ending pics of places inaccessible on foot will be posted asking how others would go about getting to said spot.... It would get old quick. One major problem with speaking about pond management on a public forum then creates the illusion that just ANYONE can go out and "manage their" waters. Pond management is meant for private waters and should be talked about on private forums. 5 years from now a management forum without the supervision of PROFESSIONALS and some of our waters could be doomed.

Cork is used as the same idea. Make your bait stand straight up. To the OP, I would try to premake small plugs that will fit inside. Make thinner as you can add to them to achieve more buoyancy.

I have had one for 4-5 years purchases in Cali. After trying in in deep clear water for bedding bass in Cali, I believe that's the only purpose for this bait. It's a heavy bulky bait to try to pitch to beds in shallower water then 10-12 FOW which lists it's uses to a more vertical presentation as in deep clear water and a large profile bait to try in leu of a large football jig and big worm which I've had zero success with.

Scroungers
Scroungers and chatterbaits are very similar. Main uses and places would be anywhere you would throw a spinnerbait but want a slower moving presentation.
