Welcome aboard! I'd go for the 1000, if only because that size is my size of choice for bass fishing - I've got a mess of 1000 Stradics. For added drag, I just palm the spool with whatever pressure I need, if at all. Loads and loads of bass over 6# caught with them.

Choosing a Spinning Reel for ML (2 power) rod
No idea how heavy that rod is, but I would think a larger reel would balance it better. I found a 1000 Stradic to balance perfectly on a BPS Carbonlite - 6'6" spinning rod. You're talking 10" longer, and the Carbonlite is pretty darn light. Absolutely love my 1000 CI4+, FK, FJ, and FI reels (in that order). We do have a 2500 FJ on my son's 7' ugly stick inshore select rod he uses for salt water. Rod balance is not bad with it. So I'd think you could swing a 2500 for balance.

Use of snap swivels?
Waaay back I used snap swivels all the time. And I did catch fish. But unless I'm tying a saltwater rig, I don't use snap-swivels. Just snaps. Not sure why not, but I've trusted opinions on the matter from guys "in the know" and wandered away from it for freshwater purposes.

Knots, which ones to use and why
That FG is best is subjective, dependent on the person tying it. Some here are proficient at it and good on them! Others, it is not worth the time or effort. I do not find it best by any stretch. Good? Sure, easy to tie, no. Good for all diameters of line, no. Braid to leader: 1) Uni-to-uni 2) Alberto In that order for me. Line to hook: Uni or Palomar (straight braid, or leader)

Kayak/Canoe Or Jon Boat
Agree a kayak is best bet, easier to portage if you get a lighter or smaller model. Absolutely do NOT forget to always wear a PFD. It is just the smart thing to do. So plan on $79-100 for one of those. Bass Pro Ascend fishing PFD is pretty good for the $, just a suggestion. Also second the scouring of Craigslist, etc., for used yaks that you can often find for way less than new. Can also look at demos/used yaks at local kayak shops.

Rookie In need of help.
Welcome aboard! Walmart sells the very good Lightning Rod Shock series for $40. These, as mentioned by @fishnkamp, are excellent rods. And while I don't prefer the feel of the Pflueger President as much, it is a great reel with solid longevity, and lots of fans. I prefer Shimano, but for $50 the Pres a fine reel. I would suggest a slightly smaller reel, as well, unless your waters are stocked with really big species, you don't *need* more line capacity. A 2500 size reel is considered the "standard" size for bass fishing... (That said, I use 1000 size reels for all bass fishing, and I do fish water with Stripers in them (caught a 14 lber, but on a bait caster), tho not worried as I'm in a kayak (can be towed by the fish) and know how to play larger fish. For a beginner, my way is not nec. the best way to go. Just mentioning to say this isn't a "one size fits all" sport.) Bottom line: Lightning Rod Shock - $40 Pflueger President - $50 Total for rod/reel - $90 (add on tax) Leftover: ~$30 for bait!! Good deal, IMO.
