Good small fishing boat?
Get the biggest boat that will fit in the Van. Canoes are uncomfortable after a few hours of fishing, plus coordinating moves with 2 people can be a nightmare. With the boat (Jon or raider) you can at least stand up for a minute of two and stretch your legs. Having a back rest is a big plus. I have had all 3 of those boats. Just my .02

In my opinion a 42 inch width should be the minimum. Stay within the weight capacity and you should be fine.

Looking at buying Yamaha 115 and boat
Kind of a loaded question if you ask me. Sitting for 7 months is not too big of a deal. The Red stabil is better than no stabil. Up here everything sits for longer than that Pressure washers, lawn mowers. A good mechanic look over (and approval) and a test drive should suffice. How old is the motor?

Question about outboard motor hp for small boat
I put a 5hp on my 10 foot basshunter. It would get swamped over the front. I wouldn't put a 5hp on it. Even though nothing might happen, liability if God forbid something was to happen a Lawyer would eat you for breakfast.

10' jon boat vs. bass raider 8'
I have both! While The raider might be a little more stable because of its design, the jon will last longer. The plastic just ends up cracking over time. After a long day on the water you will notice it is allot heavier to load back up. I have seen this on a few of them.

Easy to use depthfinder ?
Budget is whatever you can afford. They all work on the same principal. The more you pay, the better the picture and power. All depthfinders are going to require "Time in the seat" to learn how to use. There is no way around that if you really want that tool to be effective. Onboard Battery Charger Advice
I recommend at least 10 amps per side. I had a Guest dual bank charger 10 amp per side that was completely waterproof (I tested this for sure ;D) It stayed plugged in 24/7/365 when the boat was not on the water. When you spend that kind of money on one, all the manufacturers tend to be good.
