Ribs....it's What For Dinner

Decided to use my Weber Smokey Mountain Cooker i got for Christmas for the second time and made some ribs and brisket....well the brisket is still cooking and the ribs were pretty darn good especially accompanied by some sautéed brussels sprouts.

Ribs aren't that bad for you assuming you don't eat them every day...and besides the brussels sprouts made me feel better about eating the ribs :)

Brussels sprouts are just one of the many reasons I could never be a vegetarian.

one of the most underrated and poorly prepared vegetables out there....oh and here is the brisket that i finally took off the smoker about 30 minutes ago

We had T-bones, sauteed mushrooms and brussel sprouts. We prepared it as a family. We love fresh brussel sprouts. Cut the ends off and remove and dried leaves, quarter then and blanch in boiling water for 4-5 minutes. Sautee some bacon and chopped onion in a seperate pan with a little EVOO. Finally add back in the brussel sprouts and saute until you see some caramelization. My kids love them this way. Was a great dinner, nothing like firing up the grill on a chilly 17° evening.

That is pretty much exactly how we did our sprouts except no bacon....we had enough fatty pork with the ribs :) we used red onions this time but usually use vidalias but the red onions were pretty good.

The ribs look great, but Brussels sprouts?  Humans aren't supposed to eat them.  Their only useful purpose is for slopping the hogs.  :eyebrows:

I was in Memphis Saturday and had ribs at "the Pig" on Beale, I was not impressed yours look lots better

Saw this on a food channel for brussel sprouts and its awesome. Supposably they have a gas in them and this gets rid of it. Kind of a slow process but awesome.

Peel off outer bad leaves if any and then just peel off all the leaves and put in a bowl or containter. When you've got the amount of leaves you want you saute in pan with garlic, maybe a little pepper flakes and salt. At the end if you want a sweet touch add a little brown suger. AWESOME

That does sound good.  Every time i make them i always think about just using the leaves for a sauté....i just might have to do it now since i still have some left that i didn't cook

Your smoked meat produces look delicious.

I am with you on the sprouts highly underrated, I do them two ways, steamed with butter or sautéed in butter onion and some bacon or prosuto bits.

I just boil sprouts a little and eat them with vinegar.
