Whats the lightest lb of flouro you'd trust for hooksets on texas rigged 5/0 gamagatsu hooks? I was thinking about 10 but that kinda scares me a bit so I might go to 12lb

open water, id go 12lb as well, but in cover i think id step it up to 17.

I've never matched line size to a hook before. Without knowing what plastic and cover you're fishing it's hard to know if it'll work or not. On paper there is nothing wrong with 10lb and a 5/0 hook.

Hook size is not the be all when deciding on what lb test line to use. If I had a big enough plastic to warrant a 5/0 and in scattered grass I'd use it If I had no other reel readily available  to use. That being said if I was in hog territory I'd be sure my drag was set appropriately, and wouldn't be to eager to horse it in. If It gets hung up in some grass I'd just go get her.

Depends on gauge of the hook...there's light wire, medium wire, flipping, superline, etc. All come in 5/0. Heavier gauge the hook, heavier power the rod..heavier the line. 

There are 5/0 hooks with .046 diamter wire and 5/0 hooks with .078 diameter wire, 10 lb FC works OK with .046 D wire hooks, not good with larger diameter wire hooks. The problem is knot strength is compromised with larger wire hooks, hook setting can also be a issue due to weakened knot strength coupled with increased force to penetrate basses mouth.

I use 10 lb FC  with #114 (.047 D ) Gamakatsu 5/0 jig hooks during the winter and 14# FC during the summer because not fishing as deep and more cover.

I've used 5/0 with 8lb on a spinning rod because I ran out of 4/0 before. 

I use 5/0 hooks for larger plastics like 10" worms and 6" senkos.  I don't change line to use the baits.  

I've used 12lb with my Senkos forever and I only run a 5/0 EWG with them. With fluoro's low visibility in the water going up one size wouldn't matter and will give you some extra confidence driving the hook home. 

I personally don't feel comfortable with 10# line texas rigging anything.  I try to go as low as possible and have went thru the 10# line phase and it has let me down too much.  I like 12/15# Seaguar fluoro for light T-rigging.  12# Seaguar is as thin as most 10#
