I've been wanting to mess around with a white and chartreuse 1/2 oz War Eagle spinner bait with a single gold Colorado blade. Surprisingly they don't seem to make that set up. About this closest I have seen is go with one like this and clip the smaller blade off. My question is will this negatively throw off the balance or action of this lure?

I think it'll work. Colorado blades have a lot of drag. If you ever see the bait in action from the side, the blades get level and the body rides nose up.

Just do it and then you can tell us! 

You won't hurt anything, and in fact, you put a bigger blade on it if you want.

that spinnerbait can be got from walmrt for 5$. I almost got one yesterday but stopped because of the blade.

Or maybe should I not cut it off? I'm wanting to use this slowly through mud stained waters. I was envisioning a large, single gold Colorado blade on this. But with this one having dual blades should I just got with a "the more the merrier" approach?

One advantage of a single-spin is that it will "helicopter" when falling better than a double blade.  I'm honestly not sure if there are any other advantages of a single over double. If you're fishing it horizontally, like most people do most of the time, just keep it a double blade.
