Would mid-late May be peak of the spawn on G’ville or would it be mostly over by then?

Definitely will be over by then.

In general, how tough is the post spawn phase there… I know it can be quite the challenging body of water…

Late May / early June is my favorite time to fish Guntersville.

It becomes a more electronics/ledge based fishery after the spawn, but I haven't fished the lake in a really long time.

Going to Guntersville anytime will be awesome.

ETA:  Check out the 2023 BPT event on Guntersville from last year.   Wheeler won ledge fishing a jighead minnow IIrc.   Overall the lake was fishing great weight wise.

You don't have to go offshore to catch fish and have a good time.  My PB was caught on Guntersville off a dock in mid June.

I'm not a local to the area, but  I've fished Gville twice. Once was at the end of April and once was in the middle of June.  Both times I caught most of my fish in 10' or less.  The trip in April I caught them mostly on PopRs and wacky senkos.  The June trip I had more luck throwing swimjigs, frogs and punching grass.
