You can not run an electric tolling motor thru a switch/fuse panel. It draws way to many amps. You could use the switch to trigger a properly rated (amps)relay that would turn the motor on. Maybe one the truck guys use for those crazy bright off road lights

If you want sidescan, the HB Helix is a good inexpensive unit. Best to be moving for good sidescan. Not you how well that would work on a kayak.

I do well with them. I wish they were made of plastic with some rattles instead of balsa. The line tie going into soft balsa will bend and move, thus going out of tune and doing the spin. As Wayne said, they will show 13.2v hot off the charger. They will settle at around 12.7 after resting a few hours.

I made a temp TD mount by screwing TD to a 2x4 and c-clamp to transom. Ugly but worked well.
