The inside of the mouth is blue.  Is the flesh blue?  If so, is it still blue after cooking?

Flesh is tinted blue.  It turns white at cooking.

Sorry. It is a blue Ling Cod.   Red fish is a Vermillion.

I buy a lot of cod fillets from the local market.  Are all cod toothy?

Those cod you buy in the store look much different than a ling cod. They look a little like a redfish I guess is the best comparison I can think of off the top of my head, except I believe they have a barbel on the bottom of their chin also.

I think fish-monger types have free range on calling fish whatever they want.  :)

 

I often wondered what we would learn if we did DNA testing on the combo plate at a sushi restaurant
