How well do they work ? If you dye  something like a pumpkin seed or watermelon seed worm tail chartreuse with Spike-IT does it turn bright chartreuse or does it just change a little ?

It changes it quite a bit, which is a good thing I believe. If you watch most small panfish in the water, their tails tend to be brighter than their body.

The red doesn't change it as much, which again I find to be a positive. Crawdad claws are red, but just slightly different than the bodies (at least here).

I tried the dyes once and it was a hot mess. I find it more fun to mix different color worms in the same bag. In a few days I have completely unique worm generated just by contact with no dyes.

Translucent colors it changes a lot, opaque ones not so much. A watermelon worm with the tip dyed chartreuse is almost a must for smallmouths some days. 

I like the Markers, one side is chartruese, one side is red, and I also find that they are great for clear baits like salt and pepper. I can buy a salt and pepper senko and with some worm dye turn it into a bright red with black flake, or chart pepper if need be, but I used to dye tails alot with spike it, but now I rarely , bother....I would avoid the spike it bottles at all cost, they spill easy, stain carpet and everything else including counter tops, the garlic scent is really strong, and the Markers last forever and really easy to use....I actually use the marker on my hardbaits more than softbaits, a bit of chart or pink/red on a lipless crank adds flash in stained water.

JJ's magic is the best.  Go try it.  It penetrates and changes the color of the lure.  A little goes a long way. First dip your entire bait in clear then use the colors in moderation. Never tried Spike It and never will. JJ's is also scented and the scent lasts.

I've used both JJ's and Spike It, JJ's is head and shoulders above Spike It for a quality product. The colors are great, but this past year I started dunking my whole jig or plastic in the clear, seems to make a difference. Don't dip baits made out of Elaztec in them though (Zman or Strike King 3X), they melt.

?  They might if the garlic scent has nothing to do with more better hits...I wouldn't discount the scent part of the equation.....I buy JJ's chartreuse, but I buy it more for the garlic; the chartreuse is bonus

Im going to stray away from the dyes. II bought a lowe deck boat so my wife could enjoy it too. I know I would end up spilling a bottle of dye all over her boat.

I use both Spike-It and JJ's and they both have one thing in common; you end up with weird colored finger tips and that has the same effect as a sweater vest when it comes to your chances of scoring with that hottie that just walked in your favorite drinking establishment.
