Lucked into some deer meat but unfortunately it was frozen when I got it.  Thawed it out today and processed it cutting out all the fat and silver skin.  I plan on using a good portion for stew meat but I have to cook it before it can be frozen again.  I will also do some stroganoff.  Anybody have any suggestions on what else I can do with it?  I also have 2 butt roasts still in the freezer.  My buddy who feeds his family most of the year on venison tells me that the leg quarters and rump roasts are only good to process and cube.  I wanted to smoke some but he told me it is too lean.  I only have experience with tenderloin and back straps.  The fat and scrap pieces will be going to a friend who feeds working dogs raw diets.  The bone is waste.

You can grind some, and add fat to it while grinding.

 

I have done this a lot and made jerky, brats, and even burgers. The last thing I made with venison was venison enchiladas, and they were delicious! Venison chili is also a winner here.

Commercial meat is regularly frozen and defrosted more than once...so you don't "have to".  That being said, I would make some sausage and smoke it if you want to process a bunch.

Grinding it into hamburger for chili or goulash is good. Making it into sausage is about my favorite way to eat venison.

This is what I do too after all the "prime" cuts are removed.  It gets blended with 1/3 pork.  But even with a pork blend, it has a gamey, dry taste because its so lean.  Burger is fine if you use in a casserole, chili, tacos, etc but eating it plain on a bun is too strong for me.

You could always soak the meet before grinding it to help eliminate some of that strong game taste you experience. 

 

Some people use milk. I have used a little beef broth before as well.
