Does this sound like a good Setup?
That's a nice set up depending on your intended use. The Summit is a high speed reel which is intended for applications that require a fast retrieve. If you are looking for an all around choice I would look for a reel with a 6.2:1 or so gear ratio as opposed to the 7.1:1 of the Summit. You may check out the Pflueger Supreme if you are sold on a Plueger. I would also look at Shimano Citica or Curado and Abu Garcia Revo SX in that price range. The Premier is a very nice rod, for all around use I would look at 6'6" or 7' Medium power fast action. JMHO

Help/advice with new reels for my rods (baitcast)
I would go with a Shimano Curado (retails at $200). I would choose the 100D model for the rod and line you have. This would make a really nice set up.

Need Advice on buying Bionic Blade
I would get a med hvy rod (fast action) for the baitcaster since you already have med rods. 6'6" is a nice compromise length if you are going to fish from shore and a boat. The Bionic Blades are often on sale for $60. They have been on sale at the BPS here in Nashville this past week for $60 during the Spring Classic event. I think the Spring Classic Event in the Charlotte store is coming up in early March. You may want to check that out. Welcome to the forum and that is a really nice fish....congrats!

Rod/Reel Setup for "Casual" Fishing?
The Sahara is a very nice reel. I have one and think it's an excellent value. I think the med fast rod would be fine but 7' may be a bit long for shore fishing if there are trees etc... to get in your way. That would be the only reason to consider a shorter length. I really like St Croix rods, you can get a premier for about $90. You won't be sorry. I followed RW's advice mid season last summer and feel the same as fishbear. Like RW I use 6# on spinning and 12# on baitcast except one rig which has 50# braid.

New Rods and reels.
Not sure of your price range but a nice all around spinning combo would be a Shimano Symetre Reel (2500) paired with a St Croix Premier Rod 6'6" MF. The reel retails at $80 and the rod at $90. At $170 this one would be hard to beat.

I agree with Roadwarrior but don't overlook the Curado 100. It's smaller and a bit lighter. I would try them both at the store to see which you prefer.

Hey Avid, just noticed the new posts on this thread.......bet all your trouble with the arm and the setbacks there more than likely messed some with your head.....I know I go up and down mentally when things get messed up with my crohns disease. Hope you're feeling better now and they got things on track for you.
