I love my wife.  Knowing  my ever evolving quest to conquer tri tip and 3 inch steaks, she bought me an XL Big Green Egg.  Arrives tomorrow.  They set it up and go over the basics of how to manage your flame.  I'm really excited to cook in this thing.  From everything I've read it has the ability to really maintain temperatures for extended periods of time.  Also bought the teak table that goes with.

That's Very Nice Robert ~

And once you get that son of a gun all tuned in ready to rock out those 3 inch steaks,

We'll all be expecting an invite - And I like mine fairly rare - like a good vet could probably revive it. . .

I could bring some local brew,  some Dandelion wine and something is a mason jar that usually enhances just about any gathering.

but it's gonna take me a couple days to get there.

A-Jay,

If you are ever in CA, you are more than welcome to stop by my home and I would be happy to cook you a rare steak.

Thank you Sir  ~ I certainly appreciate that and would expect nothing less.

and this thread is kind of making me hungry.

Congrats, once you get that dailed in, I know someone that will be eating well

You will be VERY happy with that. We expect pics of first cookout.

Some fish pics would be nice also, but we will settle for rare 3" steaks.

My brother in law has one. Did you get the accessory kit which comes with an temperature activated axial fan? When it drops below a certain temp, the fan kicks on and "fans the fire"

That's dope man! Seems like all of our rich clients have one of those on their back deck and I've always thought they would be amazing to cook with.

I'm a little confused, please for me, a description of a 3" steak??!! Not finger food size 3" but thick wise 3" steak??!!

i would be afraid that someone would steal it in my hood, I'd have to chain that thing down to the slab on my townhouse back yard!!!  Love that table that goes with it!!

BGE delivered and setup today. The place I bought it from is run and owned by a state champion barbecue guy. He came along with the delivery team and went over all the basics, which absolutely helped eliminate any guesswork. The only slight negative is that you can't sear for the first 5 heat cycles, as you have to cure the BGE, so I kept it under 450 degrees as instructed.

After they left I brought the BGE to a stable 360 degrees. It could not be easier, especially with a pro looking over your shoulder. I plan on taking classes from him in the summer.  They offer classes on everything from ribs, bread, pizza, you name it.

6 lbs of USDA Prime tritip bought yesterday.  Almost looks like wagyu.

Marinated overnight.

~ 45 minutes...

Rest for 10 minutes covered in foil...

Slice and eat. Perfect medium rare. Incredibly juicy. The only down side is no char until I go through 4 more heat cycles. Then I'll reverse sear for 3-4 minutes per side after I get a 115 internal temp.

The neighbors will soon make a "guest dinner appearance".

Awesome!  I've been looking into a BGE for the last couple of months.  For smoking, I currently use an electric Masterbuilt and looking to step up to a BGE.

That is an incredible setup and the tritip looks amazing. I've been contemplating between getting a BGE or Weber Genesis to go alongside a standard Weber charcoal grill and an old gas smoker... you just made the decision even tougher!

You won't be disappointed.  I bought from this place.  They are very helpful.  Smitty is the owner.    http://www.eggsbythebay.com/

That place looks dialed in with everything you'd ever want/need from a product and customer service standpoint. Next time I'm in the neighborhood I'll have to swing by there. Thanks for the info!
