What is boudin?

I've heard some folks talk about boudin here on Bass resource. What exactly is it?

Hot boudin, cold cush-cush, come Tigers, push push push.

An LSU football cheer!

Boudin can consist of any meat you want, rice, onions, green peppers, celery and spices pulverized in a meat grinder and rolled into sausage links. The Louisiana Cajuns use whatever they can shoot or trap and add all types of secret spices to make this tasty treat.

If you ever go to an LSU football game and the great LSU fans offer you something to eat, just take it, thank them and enjoy it but never, never, never ask them what is in it. And that goes for all the food they offer you.

I guarantee that whatever it is, it will be great!

you can try it right where you live. next time you see a dead animal on the road, collect it, grind it, and eat it. pretty simple. stay away from skunks though.

There are a few restaraunts in KC that make a decent Boudin. In my opinion the best boudin comes from the road side stands in lousiana. Eating it from a sit down midwestern restaraunt just isn't the same..

Catt was busy fishing & had boudin for lunch.

Simply put boudin is dirty rice (rice dressing) stuffed into a sausage casing. The best boudin in Louisiana is right here in Lake Charles at Market Basket's Smokehouse.

It is the ultimate finger food!

Coonass 7 course meal; a pound of boudin & a six pack of beer.
