what's that white puck I see on some boats, (and kayaks)?

I THINK is a gps thing?  something to tell the fish finder GPS which end is the front of the boat?

For a Lowrance its a GPS puck.  It helps with direction and accuracy of the GPS system.   It gets rid of the directional icon on the graph spinning trying to locate the direction the boat is going.  Its a must have in my opinion for off shore fishing and locating specific sunken objects.

for Humminbird/Minn Kota it is a heading sensor.  That's likely what you're seeing on kayaks.  It tells the motor or FF which direction the boat is pointing.  On an autopilot kayak it enables the jog function.  On a HBird fish finder it will show you the boat icon with a straight line to where you're pointing and I agree completely with Mike that it's indispensible.  With a heading sensor and range rings you can pinpoint a piece of cover that you've graphed over.  With FFS you can do the same while also using the range rings to creep up to it and into FFS range.

Totally Agree ! 

Also a must have during periods of super low visibility & night operations..

For me, that little green line and range finder keeps me off the fish

and has accounted for too many good bass to count.

My Humminbird one boat network has two pucks.  The one in the front is the sensor for the trolling motor and is essential for spot lock jog.  Since I have 3 Humminbird units that can mark waypoints the one in the back controls the gps position when I mark one so they are all marked the same pertaining to the boats location.
