1pc. or 2pc. Rod?
I imagine that searching out spots to wade involves a fair amount of driving around. I'd probably want a 2-pc. for this. Especially if you're running around with fishing buddies.

What happens to the dead fish?
This is highly subjective and depends a lot on where the fish is from, water quality, forage, and temperature. Great Lakes smallmouth are pretty good. The largemouth, not so much. Taste like spoiled mud. I've had largemouth from southern lakes that aren't too bad. They still have a strong flavor I don't prefer, unlike all the blue gill and perch, that actually taste sweet to me.

Left or right?
This is what I use LH reels for. For moving baits, I prefer a RH reel. So, for the sake of sarcasm in this thread, anyone not using both is a fool!

New 2019 Hobie Outback
I think the old models were $2500ish. They go for $1500-$2k used. The outback slots in between the Compass ($2000) and the Pro Angler ($3500). It is competitive with other peddle boats, like the Predator, Dorado, Titan, etc.

I think it depends on where you fish. Someone fishing shallow lakes, choked with weeds probably is going to have a hard time with drop shot or cranking. I would have some difficulty using finesse jigs in 40' of Lake Ontario water for smallmouth. Same goes for jerkbaits, which are popular one lake over on Erie. They typically only come into play with a short window in spring and fall. For a beginner fisherman, I think detecting the jig bite is the trickiest. I'm still learning things about them, and I fish them a ton.

Show off your Stuff
I've set up plenty of people with 4000/5000 size reels and 50/65 lb. braid or up to 17# mono/fluoro for bass fishing. For what ever reason, be it disability or inability, they won't use a baitcaster, so to use heavier line, the larger spool diameter works well. Many times, it's for frogging. They usually have to look at inshore rods for this.

Pretty clever. I dig it. Does it stop at 90° when deploying? That would be convenient, my arm can get bumped, giving me janky readings.

"Looks good" means nothing compared to seat time. You need to find a demo day, or a shop that let's you float before you buy. The $750-1000 budget really limits your choices. You still have to get a PDF and a paddle, plus accessories.

Except in extreme fishing conditions, you typically only need 4-8 lbs. What rod do you own that you are willing to tie 11 lbs. to and yank at full force? My bet is none.

St Croix warranty issues
There's literally dozens of threads where someone knocked the tip top insert out. Pretty easy to do. Just drop the rod, or bang it on something.
