Being from Louisiana you don't ask what is in the gumbo.

Elk is my favorite, moose is also very good.

Deer is entirely dependent on what it is, how it was killed, where it was killed, and how it was handled.

Wild hogs are a toss up, never eat javelina! 

Gator, shark, and swordfish are all excellent. 

Rabbit is a favorite, and I would rather eat pheasant than chicken. 

I will agree with everyone else, bear meat is down right nasty.  I have had jerky from a buddy that may be the most meticulous hunter/preparer of wild game, and it was still a one bite deal. 

Antelope, is all in the preparation and caring after the kill.  The meat turns gamey faster than anything I have ever eaten. 

Ostrich and buffalo are both great, at least the good cuts of a buffalo are.

And the best wild game IMO, is bobwhite quail.  Absolutely tasty.

Humans are made to consume fat.

Nope.  We're made to consume lean meat.  Wild game is rarely fatty like a big ole juicy steak.

Javelina is fierce. It tastes like what I imagine toe jam to taste like.

We have both Russians and feral domestic pigs here. The pigs that are more boar than domestic are pretty gnarly.

I've had bison and ostrich, I'll take kobi beef any day of the week.

Kobe beef is delicious, but sometimes ya gotta eat something leaner.

Humans are made to consume fat. Cut back on the grains and simple sugars and you can start eating more delicious fatty meat and be a lot healthier.

Exotic Meats I've eaten:

A bunch of exotic fish

bison

rabbit

Probably some more but I forget that kind of stuff.

Bottom line: eating red meat everyday is not healthy.

The topic is what have you eaten, not what is healthy and ones daily diet.

Mostly anything eaten on rare occasion or in moderation will not be harmful if your cholesterol levels are within the recommended range, at my age a good portion of the population is on medication to regulate the levels, luckily I'm not...yet !

I absolutely love elk.  And you guys are kidding when you say that bear is terrible.  It was just awful...I really don't want to think about it.

I like squirrel, but I can never seem to cook it right.  One of my hunting buddies does a heck of a job though.  I thought that wild hog tasted pretty good, but I've only had it once.

I had lamb at a Korean BBQ place but that's about it.

I believe "lamb" in Korean means  C.A.T   

Funny this thread should come up - just last night, for the first time, I had moose, wild hog, rabbit, and buffalo ribs. Everything was delicious, especially the buffalo ribs. The moose was also very tasty. My girlfriend's father went to a game dinner in town and came back with tons of leftovers :-)

Let's see. Where should I start-

Whitetail and Blacktail Deer- d**n good

Bear (black)- Not bad in stew form

Bison- Pretty good

Antelope- Pretty good also

Squirrel, Rabbit, Coon, Javelina, Groundhog- Didn't much care for 'em

Coyote- ABSOLUTELY HORRIBLE! (only had it in jerky form and never again will I eat any jerky this guy makes)

Turtle (perferably snapping turtle)- Wonderful

Ducks (the wild ones you shoot, not store bought)- My favorite thing to eat.

Pheasant, Dove, Quail- d**n good also

Geese- Ranks right there with Ducks

Wild Turkey- Good (the actual bird or the whiskey ;))

South Texas javelina is d**n good.  I was sad when I ran out.

Squirrel and rabbit are "exotic"?  Hell, deer isn't exotic.

We here got a say: "todo lo que corre, nada y vuela va para la cazuela" ( everything that runs, swims or flies goes to the pot ), I 've eaten lots of meats, gator was good but the texture was strange, kinda like chewing on a chewing gum with a fsihy taste to it. Horse, pretty good, very lean. Iguana, tastes like chicken.

But being down here and with all the folkloric food I 've found in my trips there 's still some things I would not try, many insects people eat here as delicacies, jumiles, grashoppers and things like that ---> yuck ! specially jumiles which are normaly eaten alive ( they literaly crawl from the taco and walk all over your face ), magüey worms, oh man, those are really good. ;)

Growing up in SD, we had the chance to get bison/buffalo a LOT, and I got it every chance possible. Here in FL, if I find any in a local meat area, I pick up a few pounds. It is lean and a very healthy red meat, much better than some others. My brother in law does plenty of deer and turkey hunting so we tend to get a decent amount of wild meat there as well. I have also had ostrich which isn't that great, more of a tougher chicken type meat :D

Growing up in africa witha a family that hunts i have eatan most of african antelope species.As well as elephant and girrafe.I dont eat any carnivores but a lot of the american hunters who come down eat the backstraps of the lions and leopards that they shoot.crocodille tail is also very popular.Hippopotamus also is very tasty.We have a tasty snack called biltong which is salted and dried meat strips similar to what to jerky is i think.Ostrich is very common and is considered very healthy asit is low in cholesterol.

Trust me when I say that deer, squirrel and rabbit are definitely exotic animal to these kids.

Hell, I had one kid point at a deer and exclaim, "I have never seen a cow before."   :-?
