Trimming Jig weed guards
I throw Oldham's Lures Trailer Hitch Jig which has an excellent weed guard that seldom needs trimming but I do however fan it out; I seldom trim the skirt since I like a big bulky jigs.

Bait fish topic, the mouse and not the owl????
If one truly wants to learn how to consistently catch both numbers & big bass there are 3 things you must learn above every thing else. #1 Finding & understanding structure #2 Understanding bait fish behavior #3 Understanding bass behavior If you don't understand these 3 you are destine to be an average angler at best

NIGHT FISHING
The eyes of a bass go through a night adaptation cycle beginning at twilight and are usually adapted for black, white, and all shades of gray within an hour after darkness. Bass can see color but not at night, color it's self is meaningless at night. Bass cannot see details at night, so don't waste time with meticulously painted or patterned lures. Contrast is more important by far than color at night. If you fish water where shad or minnows are the predominate prey species, then try white spinners with a white grub. The usual night time favorite black is the second choice in shad populated lakes. Black or dark hued lures give maximum contrast at night when run on or near the surface. Under water vision for the bass is reduced at night, so use lures that are a little larger. Slow retrieves work better because it lets the bass locate the lure easier and zero in on it. Fish the same baits, same locations, and same techniques you would during the day.

How Do You Catch Middle Column Suspending Bass?
During the fall and winter tons of suspended bass are caught on jigging spoons; there is an excellent article over at The Ultimate Bass Fishing Resource Guide by Dean Stroman in which he details this technique quite well. http://www.bassresource.com/fishing/Winter_Big_Bass_Fishing.html

Best fighting fish
It would be a tossup between a Peacock & a Striper; since you don't list striper I'll vote Peacock.
